Fry's Bakery is a beloved institution in the Vic West neighbourhood of Victoria, British Columbia. For over a century, our family-run bakery has been dedicated to crafting the finest, most delicious sourdough bread, pastries, and pizzas using only the best locally sourced ingredients and a commitment to traditional techniques. Our bakery is a community-supported business, serving our lovely neighbours and a select few shops and restaurants around the city.

A Rich History

Our story began in Moosejaw, Saskatchewan in 1897 when Charles Fry, Byron Fry's great-great-grandfather, opened a bakery. The Frys relocated to Vic West in the 1920s and established a thriving bakery at 403 Craigflower Rd, which became a staple in the Victoria community. Unfortunately, the bakery closed during the Second World War, but the Fry family's passion for baking never wavered. In 2010, Byron Fry, unaware of his family's history, built a wood-fired oven on a trailer and began baking bread for farmer's markets. As he delved deeper into his family's past, he discovered the original Fry's logo and family photos, and the historic connection came full circle in 2012 when Fry's bakery moved into the storefront at 416 Craigflower Rd, directly across from its original location.

Our Commitment to Quality

At Fry's Bakery, we're dedicated to crafting the finest, most delicious bread, pastries, and pizzas using only the best locally sourced ingredients and traditional techniques. Our bread-making process involves a slow, natural fermentation process that results in a crusty, chewy bread with a depth of flavour and aroma that's unmatched. We use organic, freshly stone-milled flours and natural yeast to create a bread that's not only delicious but also healthier for you. Our pizzas are handcrafted using a naturally leavened crust made from freshly milled durum and spelt, and topped with locally sourced ingredients and fresh herbs.

Pizza Sundays

On Sundays, we transform our bakery into a pizza shop, offering a weekly menu featuring a selection of mouth-watering pies crafted by our pizza team. Our pizzas are cooked to perfection in our wood-fired oven, and feature locally sourced ingredients and fresh herbs. We offer a limited selection of bread, doughnuts, and pastries from 9 am to noon, and pizza starts at noon and goes until we sell out.
